1 medium onion, finely chopped
1 Tbsp. oil
1 Tbsp. butter
2 medium carrots, sliced in medium size chunks
1 stalk celery, sliced in medium size chunks
1 tsp. caraway seeds
2 cups water
2 cups chopped cabbage
1 pound Kielbasa or polish sausage, sliced in small slices.
1 can diced tomatoes
1 Tbsp. brown sugar
1 can garbanzo beans, (chick peas) rinsed and drained
1 Tbsp. vinegar
1 tsp salt
½ tsp pepper
Instructions: In a pan, sauté onion in oil till tender. Add carrots & celery, sauté for 3 minutes. Add caraway seeds& stir one minute longer. Add water, cabbage, sausage, tomatoes and brown sugar. Bring to a boil, reduce heat, cover and simmer for 15 to 20 minutes. Add beans, vinegar, salt & pepper. Simmer 5 to 10 min more. Sprinkle with parsley.
